The Director of Food & Beverage is a key leadership role within Jena Choctaw Pine Casino is responsible for overseeing the strategic planning, management, and execution of all food and beverage operations. This role plays a crucial part in delivering exceptional dining and beverage experiences for our casino guests, ensuring a high level of customer satisfaction, profitability, and compliance with relevant regulations.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
Strategic Planning:
- Develop and implement a comprehensive food and beverage strategy that aligns with the casino's overall business objectives.
- Continuously evaluate market trends, customer preferences, and competitor offerings to identify opportunities for growth and innovation.
- Direct the daily operations of all food and beverage outlets, including restaurants, bars, and catering services.
- Oversee inventory management, procurement, and vendor relationships to ensure quality and cost-effective sourcing.
- Monitor and manage the department's budget, revenue, and expenses to maximize profitability.
- Establish and maintain operational standards, including hygiene, safety, and compliance with health regulations.
- Recruit, train, and develop a skilled and motivated team of food and beverage professionals.
- Set performance expectations and provide guidance to ensure high-quality service and guest satisfaction.
- Foster a positive work environment and encourage collaboration among staff.
- Collaborate with chefs and culinary teams to create and update menus that meet guest expectations and reflect the Resort's branding.
- Ensure a balance of diverse culinary offerings, including high-end dining, casual dining, and special promotions.
